Once simmered, strain out the lavender buds and pour the cream over finely chopped chocolate. Stir slowly until the chocolate melts completely, creating a smooth ganache. Allow the ganache to cool to room temperature before refrigerating it for a few hours. This step is crucial as it will make the truffle mixture firm and easy to shape.
