- Lower the mixer's speed to medium and gradually add sugar.
- Return the mixer to high speed and beat until stiff peaks form.
- While on high speed, add food coloring as desired. (remember that when you add to the dry ingredients it will lighten considerably, so add enough to get your desired final color)
- Remove the bowl from the mixer and gently fold in the almond flour/sugar mixture until the batter loosens slightly and becomes runny.
- To test readiness, lift a small amount of batter and drop it back into the bowl: if it melts back after 20-30 seconds, it's ready.

It is easiest to place filling in a piping bag and pipe a small amount of filling the center or each cookie and placing the top cookie on pushing them together gently. Place in refrigerator to set for about 1/2hr.
